SaddlebackMountain includes a saddle-shaped summit created by the two highest peaks in the Santa AnaMountains of OrangeCounty. This is the essence of the land, where untold generations of American Indians followed a seasonal pattern of life that brought them to the massive oaks of the beautiful mountain canyons and foothill valleys. They were briefly followed by the coming of the California Missions, and then the Mexican Ranchos and their festive lifestyle and bellowing of herds of cattle.
Since then generations of OrangeCounty ranchers, orange growers, and those who enjoy their privacy have grown up “Beneath the Shadows of Old Saddleback.” I am very fortunate to be included in this group, and Saddleback will always be a part of my memories of home. It is with this sense of nostalgia and with great pride in our family history that we present Saddleback Salsa. This peach salsa is made with sun-ripened peaches, beefsteak, cherry, and yellow pear tomatoes, a blend of sweet and hot peppers, onions, garlic and spices. A flavorful tribute to the landmark that has overseen the McFadden family for many generations.
